You ever have one of those days when you need a quick dinner, something that doesn’t take time or effort to make? Maybe something that can just be taken out of the freezer and thrown in the oven?
You might think that “frozen dinners” are simply not an option for your paleo lifestyle, but you’d be surprised how easily you can make this quick baked salmon with vegetables dinner with barely any prep using frozen ingredients.
The key ingredient here is the salmon: I get a big box of this marinated wild-caught salmon from Costco, and it creates an amazing dinner with literally zero prep!
Not only is the salmon convenient to make, it is also good for you: salmon is high in Vitamins D and B12, omega-3 fatty acids, and is generally considered a very healthy food.
The salmon comes marinated in olive oil and spices – no artificial ingredients added, so it’s actually completely paleo and healthy.
As a side, I like to use a medley of vegetables, as it is both nutritious and super easy to make. You can use frozen vegetables (Costco has a great assortment of those, too!) or whatever fresh vegetables you have on hand. Just mix them with some olive oil and your favorite seasonings, and arrange them on the same pan as your salmon.
Bake it all for about 35 minutes, and dinner is ready! It literally takes me about 4 minutes to throw everything in the baking pan and forget about it.

- 2 Morey’s Frozen Marinated Salmon Fillets (from Costco)
- A selection of roughly chopped vegetables (I used frozen broccoli, cauliflower, carrot, squash, red potatoes)
- Organic Extra Virgin Olive Oil
- Salt, Pepper + your favorite spices for vegetables (I used dill, parsley, turmeric, garlic powder)
- Preheat oven to 375 F
- Chop vegetables, place them in baking pan and mix with 1 tbsp olive oil, salt, pepper, and seasonings.
- Place the salmon fillets among the vegetables in the baking pan.
- Bake for 35 minutes.
