Brush the pork chops with some olive oil and season with salt and pepper. Place them on a pan and brown on medium heat, flipping until both sides are slightly brown.
Meanwhile, rinse the carrots, pat them dry, and brush with some olive oil. Coat with 1 teaspoon of cinnamon and 1 teaspoon of garlic powder.
Place the browned pork chops and seasoned carrots in a baking pan. Bake in the oven for 30 minutes.
With about 15 min left of baking, heat some olive oil in a pan over medium heat. Add minced garlic and sautee for 4-5 minutes.
Add minced mushrooms and minced shallot to the pan with garlic, and season with salt and pepper to taste. Let the vegetables cook, stirring occasionally, until soft – about 5 minutes.
Add 2 tablespoons of Mirin Sake and sautee 3 more minutes.
Remove pork chops from the oven and plate them. Divide and plate the carrots as well. Top the pork chops with the mushroom garlic mixture from the pan. Serve with apple slices sprinkled with a bit of cinnamon. Enjoy!
